It is 4:15 AM on a Saturday in downtown Fredericksburg. The city is still completely quiet, but inside Battlefield Bagel Co., the warmth of the oven and the scent of toasted sesame fills the room.
“You cannot cheat a bagel,” explains co-founder Sam. “If you blow air into dough with commercial leaveners and just bake it in a convection oven, you have a round roll with a hole in it. A true bagel demands a long cold proof so the wild yeasts develop complex lactic sugars, followed by an honest bath in malted boiling water.”
The result is unmistakable: a glossy, micro-blistered crust that snaps when bitten, revealing a dense, chewy interior that holds up to thick farmstead cream cheese and heirloom tomato slices.
